Which trains are Eurail passes valid on?

We're planning a trip to Central Europe to leave on Christmas Eve (right around the corner!). It's coming up quickly & it will be our first time traveling with a Eurail Pass by train throughout the following countries:

Switzerland, Austria, Hungary & Germany.

The details of the trip are Zurich to Interlaken. Interlaken to Grindelwald. Grindelwald back to Zurich. Then Zurich to Salzburg. Then Salzburg to Budapest. Then Budapest to Vienna. And finally Vienna to Munich.

I've looked online for train schedules & am finding schedules to be pretty inconsistent. I don't know which schedules to count on. Does anybody know of a reliable site for such a thing? It seems that certain countries use certain sites. But what if I'm traveling between countries?

Also, I read somewhere that the Eurail pass won't work on certain regional trains. How are we supposed to know if our Eurail pass is valid on a particular train or not?

Lastly, how far in advance do we need to order our Eurail Passes? Our trip is only 11 days away.
